About this recipe: This is a simple and highly nutritious Chinese dish. Celery is stir-fried with spring onions, ginger and dried tofu. Serve with freshly cooked white rice, if desired.


Serves: 3 - 4

  • 500g celery, cut into 4cm lengths, discard leaves
  • 2 tablespoons oil
  • 1 spring onion, cut into 2.5cm pieces
  • 1 (1.5cm) piece ginger, thinly sliced
  • 250g flavoured dried tofu, rinsed and cut into thin strips
  • soy sauce to taste
  • 1 pinch salt or to taste
  • 1/8 teaspoon chicken or vegetable stock granules

  1. Bring a large pot of water to the boil with a little salt and oil. Blanch the celery in the water for 30 seconds, drain and set aside.
  2. Heat the oil in a wok over high heat. Add the spring onion and ginger and stir fry until fragrant. Add the tofu and soy sauce; stir fry for 1 minute.
  3. Add the celery, a pinch of salt and stir-fry for 2-3 minutes. Sprinkle the chicken stock granules and toss. Serve.


Flavoured dried tofu can be purchased in Chinese/Oriental speciality shops or online.
