Pork Kidney and Cucumber

    This is a great Chinese dish to make if you're on a budget. It's simple and delicious. Sliced pork kidneys and cucumber are cooked in a seasoned stock.

    Serves: 3 

    • 1 bowl cold water
    • 1/2 teaspoon oil
    • 1 teaspoon salt
    • 1 1/2 teaspoon soy sauce
    • sichuan peppercorns, to taste
    • 1 tablespoon chopped spring onion
    • 1 tablespoon finely chopped ginger
    • 240g pork kidneys, cleaned, rinsed, dried and cut diagonally into large thin slices
    • 160g cucumber, cut diagonally into thin slices
    • sesame oil, as needed

    1. Heat the water and oil in a wok. Add the salt, soy sauce, Sichuan peppercorns, spring onion and ginger and bring to the boil.
    2. Add the kidney and cucumber and bring back to the boil. Skim off any foam that forms.
    3. Spoon out all of the ingredients, drain and set onto a serving dish. Reduce the cooking liquid until half its original volume.
    4. Pour the reduced cooking liquid over the kidney and cucumber. Sprinkle with sesame oil and serve.
