Braised Cola Chicken Wings

About this recipe: This Chinese-style recipe is a great way to spruce up the humble chicken wing. Marinated chicken wings are simmered in an aromatically rich cola sauce.


Serves: 4 

  • 500g chicken wings, rinsed and patted dry
  • soy sauce, to taste
  • 2 teaspoons rice wine
  • 2 teaspoons cornflour
  • 1 pinch sugar
  • salt, to taste
  • 1 tablespoon vegetable oil
  • 1 (5cm) piece ginger, sliced in half
  • 500ml cola fizzy soft drink, divided
  • 3 tablespoons oil
  • 1 spring onion, cut into 2.5cm lengths
  • 1 pod whole star anise

  1. Cut 1/2 of the ginger into fine shreds and the other 1/2 into thin slices.
  2. Lightly score the skin of the chicken wings to allow the flavours to permeate.
  3. In a large bowl, mix together soy sauce, rice wine, cornflour, sugar and salt, then toss in the chicken wings. Let sit for 30 minutes.
  4. Add 1 tablespoon vegetable oil, shredded ginger and just enough cola to cover the wings, mix well and let marinade for 15 minutes. Reserve the remaining cola.
  5. Heat 3 tablespoons oil in a wok over high heat. Stir-fry the sliced ginger and spring onions until fragrant. Remove the ginger and spring onion and discard.
  6. Add the wings and fry until both sides are golden brown. Reserve the marinade.
  7. Pour the reserved cola, star anise and some marinade to the wok. Cook over high heat until boiling.
  8. Turn down the heat and simmer for 15 minutes until the sauce is thickened. Remove from the wok and serve.
