About this recipe: This is a simple, refreshing and delicious Chinese dish. Sliced lotus roots are drizzled with an aromatic sweet and sour dressing. Serve as a salad or side dish.


Makes: 3 - 4

  • 500g fresh lotus roots, rinsed and cut into thin slices
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons sugar
  • 2 teaspoons vinegar
  • 1 spring onion, finely sliced
  • 2 teaspoons finely chopped ginger

  1. Cook the lotus roots in boiling water for a few minutes, until no longer raw. Drain into a colander set in the sink and cool under a cold running tap. Drain and transfer to a serving dish.
  2. Combine the salt, sugar, vinegar, spring onion and ginger in a small bowl; mix thoroughly. Drizzle over the sliced lotus roots and serve.


Fresh lotus roots can be purchased in Chinese/Oriental speciality shops. If unavailable, use tinned lotus roots.
