Chinese leaf and tofu stir fry

    A simple Chinese vegetable dish, which is light and packed full of flavour. Chinese leaf cabbage is stir-fried with dried tofu, tomatoes and seasonings.

    Makes: 3 - 4 servings

    • 2 tablespoons cooking oil
    • 100g dried tofu, cut into thick slices
    • 1 whole Chinese leaf cabbage, leaves torn into bite-sized pieces
    • soy sauce to taste
    • 2 tomatoes, peeled and cut into small pieces
    • 1 spring onion, cut into 2cm lengths
    • salt to taste
    • sugar to taste
    • chicken or vegetable stock granules to taste

    1. Heat 2 tablespoons oil in a frying pan or wok until hot. Add the tofu and brown on both sides. Stir in the cabbage and season with soy sauce to taste.
    2. Add the tomatoes and stir-fry until the liquid is released. Stir in the spring onion and season with salt, sugar and chicken stock granules. Serve.


    Dried tofu can be purchased in Chinese/Oriental speciality shops or online.
