A simple Chinese vegetable dish, which is light and packed full of flavour. Chinese leaf cabbage is stir-fried with dried tofu, tomatoes and seasonings.

Ingredients
Makes: 3 - 4 servings
2 tablespoons cooking oil
100g dried tofu, cut into thick slices
1 whole Chinese leaf cabbage, leaves torn into bite-sized pieces
soy sauce to taste
2 tomatoes, peeled and cut into small pieces
1 spring onion, cut into 2cm lengths
salt to taste
sugar to taste
chicken or vegetable stock granules to taste

Heat 2 tablespoons oil in a frying pan or wok until hot. Add the tofu and brown on both sides. Stir in the cabbage and season with soy sauce to taste.
Add the tomatoes and stir-fry until the liquid is released. Stir in the spring onion and season with salt, sugar and chicken stock granules. Serve.
