This is an aromatic and tasty Chinese soup, made by simmering together pork bones, fresh lotus roots and seasonings. Serve alongside rice, if desired.

500g fresh lotus roots, cleaned
1 piece pork leg bone, broken
2 slices ginger
1 teaspoon salt

Blanch the bones in boiling water for a few minutes. Remove and rinse.
Bring some water to the boil in a large stock pot. Add the ginger and bones and return to the boil over high heat. Turn down the heat and simmer for 40 minutes.
Cut the lotus root into bite-sized pieces. Add to the soup and cook for 30 minutes. Season with salt and serve.
You can purchase pork bones from your local butcher. You may need to place a special order for them.
Fresh lotus roots can be purchased in Chinese/Oriental speciality shops or online. If unavailable, use tinned lotus roots.
