    About this recipe: This is a traditional Shanghai dish, which is fantastic with freshly cooked rice. A seasoned pork mince is topped with eggs and steamed to perfection.

    Makes: 3 - 4 servings

    • 400g minced pork
    • 1 spring onion, finely chopped
    • 1 tablespoon rice wine
    • 1/2 teaspoon salt
    • 1 teaspoon sugar
    • 1 1/2 tablespoons soy sauce
    • 1 tablespoon water
    • 1 raw salted duck egg
    • 2 eggs

    1. In a deep, heat-proof dish, mix together the minced pork, spring onion, rice wine, salt, sugar, soy sauce and tablespoon water. Flatten with the back of a spoon.
    2. Crack the salted duck egg and carefully lay it on top of the minced pork. Crack the eggs and lay next to the salted egg. (Do not break the egg yolks).
    3. Steam the dish for about 30 minutes or until the meat is well-cooked. Remove and serve.


    Rice wine and salted duck eggs can be found in Chinese/Oriental speciality shops.
