Stir Fry Mushroom Duo

    This is a quick and easy stir fry dish. Shiitake mushrooms are stir-fried with button mushrooms in a wonderful Chinese sauce. Feel free to substitute in any mushrooms you prefer.

    Makes: 2 servings

    • 50g dried shiitake mushrooms, soaked until soft, sliced
    • 2 tablespoons reserved mushroom soaking liquid
    • 1 teaspoon cornflour
    • 1 1/2 tablespoon vegetable oil
    • 250g button mushrooms, thickly sliced
    • 1 tablespoon soy sauce
    • 1/8 teaspoon salt
    • 1 teaspoon sugar
    • 1 teaspoon sesame oil

    1. Mix together the cornflour and mushroom soaking liquid. Set aside.
    2. Heat the oil in a wok until very hot. Stir-fry the shiitake and button mushrooms for 5 minutes.
    3. Add the soy sauce, salt and sugar and stir well. Add the cornflour slurry and toss to coat.
    4. Drizzle with sesame oil and serve.


    Dried shiitake mushrooms can be purchased in Chinese/Oriental speciality shops or online.
