About this recipe:This is a hot and spicy Chinese chicken stir fry. Marinated chicken is stir-fried with ginger, garlic, tangerine peel, Sichuan peppercorns and chillies. Enjoy with freshly cooked rice.
Makes: 3 - 4 servings
1 (2.5cm) piece fresh ginger, cut in half
1 whole young chicken, cleaned and cut into 2cm cubes
2 cloves garlic, sliced
2 tablespoons rice wine
1 teaspoon sugar
salt and ground white pepper to taste
2 tablespoons cooking oil
1 teaspoon chopped dried tangerine peel
1 clove garlic, finely chopped
1 tablespoon Sichuan peppercorns
100g dried red chillies

Cut one half of the ginger into slices and finely chop the other half.
Marinate the chicken in sliced ginger, sliced garlic, rice wine, salt, sugar and ground white pepper and mix well. Chill for 1-2 hours.
Heat 2 tablespoons oil in a wok over medium heat until hot. Stir-fry the chicken until the wok is dry. Add the tangerine peel, chopped garlic and chopped ginger. Continue to cook for another 2 minutes.
Add the Sichuan peppercorns, dried chillies and any additional salt (if required) and fry for 5 minutes. Serve.
Dried tangerine peel, Sichuan peppercorns and rice wine can be purchased in Chinese/Oriental speciality shops or online.
