About this recipe: This is a fantastic way to prepare crabs when in-season. They are simply steamed and served with a seasoned dipping sauce and Chinese black vinegar.


Serves: 3 - 4

  • 1kg crabs, cleaned
  • 1 tablespoon Shaoxing wine
  • 2 tablespoons finely chopped ginger
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 1/2 tablespoons Chinese black vinegar
  • sugar to taste
  • monosodium glutamate (MSG) to taste

  1. Make the sauce by heating the sesame oil in a small saucepan for 15 seconds. Add the soy sauce, sugar, MSG, Shaoxing wine and heat for 15 seconds more. Pour into a bowl and add ginger, set aside.
  2. Pour some black vinegar into a separate bowl and set aside.
  3. Steam the crabs over high heat for 15-20 minutes or until they are cooked through. Transfer to a serving plate and serve with sauce and vinegar.


Shaoxing wine, Chinese black vinegar and monosodium glutamate can be purchased in Chinese/Oriental speciality shops or online.
