    About this recipe: Delicious hot with extra grated Parmesan or as a cold pasta salad with fresh basil and pine nuts. Easy to make and full of flavour!

    Serves: 8 

    • 80g chopped onion
    • 2 1/2 tablespoons pesto
    • 2 tablespoons olive oil
    • 2 tablespoons grated Parmesan cheese
    • 450g pasta
    • salt to taste
    • ground black pepper to taste

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Cook pasta in a large pot of boiling water until done. Drain.
    2. Meanwhile, heat the oil in a frying pan over medium low heat. Add pesto, onion, salt and pepper. Cook about five minutes, or until onions are soft.
    3. In a large bowl, mix pesto mixture into pasta. Stir in grated cheese. Serve.

    I made this guessing the approximate amounts stated. I have to say that this is sooooo nice. My kids love it and they are fussy with pasta. There were no reviews when i made it so was a bit sceptical but i am currently making the second batch for adults and will be nice cold tomorrow afternoon. I used pasta shells, pesto and grated pizza cheese from aldi, and ready diced frozen onions which made it even quicker. well done and thanks for sharing. - 15 Jul 2015
