Tofu and Shiitake Mushroom Stir Fry

    This is a vegan-friendly Chinese stir fry. Shiitake mushrooms are stir-fried with tofu and carrots in a light sauce. Enjoy with freshly cooked rice, if desired.

    Serves: 3 - 4

    • 250g firm tofu, cut into bite-sized pieces
    • 3 dried shiitake mushrooms
    • 1 carrot, thinly sliced
    • 1 1/2 tablespoons oil
    • 1 teaspoon light soy sauce
    • 1 teaspoon cornflour, mixed with 2 teaspoons water
    • 1/4 teaspoon salt

    1. Soak the mushrooms in warm water until soft. Remove, rinse and thinly slice. Strain the soaking liquid and reserve 3 tablespoons.
    2. Heat the oil in a frying pan. Stir-fry the tofu until golden. Remove and set aside. Reserve the oil in the pan.
    3. Heat the same frying pan until hot. Stir-fry the mushrooms and carrots.
    4. Add the tofu and gently stir. Stir in the mushroom soaking liquid and cook for 2 minutes.
    5. Stir in the soy sauce and cornflour slurry. Cook until the sauce has thickened. Season with salt and serve.


    Dried shiitake mushrooms can be purchased in Chinese/Oriental speciality shops.
