Sweet potato porridge

    This authentic Chinese breakfast dish is traditionally served with pickled vegetables. You can of course, enjoy it with whatever you feel like. Rice is simmered with sweet potatoes until lusciously thick.

    • 150g rice, rinsed
    • 150g sweet potato, peeled and cut into 3cm cubes

    1. Place the rice in a large stock pot with 2.5 litres water. Bring to the boil over medium-high heat and turn the heat down to simmer.
    2. Simmer for 20 minutes, stirring occasionally to prevent the rice sticking on the bottom of the pot.
    3. Add the sweet potatoes. Simmer for an additional 40 minutes or until the rice and sweet potatoes become soft and the porridge is thick.
