Homemade Black Bean Burgers

Ingredients
Serves : 4
1 (400g) tin black beans, drained and rinsed
1/2 green pepper, quartered
1/2 onion, halved
3 cloves garlic, peeled
1 egg
1 tablespoon chilli powder
1 tablespoon cumin
1 teaspoon hot pepper sauce
50g (2 oz) dried breadcrumbs

Preheat oven to 190 C / Gas mark 5, and lightly oil a baking tray.
2.
In a medium bowl, mash black beans with a fork until thick and pasty.
3.
In a food processor, finely chop green pepper, onion and garlic. Stir into mashed beans.
4.
In a small bowl, stir together egg, chilli powder, cumin and hot pepper sauce.
5.
Stir the egg mixture into the mashed beans. Mix in breadcrumbs until the mixture is sticky and holds together. Divide mixture into four patties.
6.
Place patties on baking tray, and bake about 10 minutes on each side.
