About this recipe:This Chinese dish makes a great summer soup. Brined bamboo shoots are simmered with dried shrimp, tomato and winter melon. Enjoy alongside rice, if desired.
20g bamboo shoots in brine, rinsed, soaked and sliced
250g winter melon, seeded, peeled and cut into 4cm thick slices
1 tomato, thinly sliced
20g dried small shrimp, rinse
2 teaspoons sesame oil
1 pinch sugar

Bring to the boil over medium heat. Turn the heat down and simmer for 20 minutes.
Combine the water, dried shrimp, bamboo shoots, tomato and sugar in a stock pot.
Add winter melon and cook until soft and translucent. Turn off the heat and let cool.
Once cool, add the sesame oil and serve.
Bamboo shoots in brine, winter melon and dried small shrimp can be purchased in Chinese/Oriental speciality shops.
If winter melon is unavailable, substitute in bitter melon - simply salt for 30 minutes before using.
