Pour cream into a food processor or blender. Process for 10 minutes, or until the butter separates. Strain off the liquid. Season to taste with salt if you like. Press butter into a small bowl with the back of a spoon to further remove liquid.
You can also do this in the mixer.
I use our Kenwood and the K-beater does an excellent job in about the same time. Don't be afraid to run it fairly fast but BE AWARE of the fact that you may get a bit of splash if you try doubling the recipe.
The best way I've found for draining is to line a colander with butter muslin (wonder why they call it that) and tip the separated cream into it.
