About this recipe: You can make great tasting butter at home just by putting double cream in a food processor and running it till it turns into butter. It's a good experiment for the kids to watch, too!

Serves: 16 

  • 450ml (16 fl oz) double cream
  • 1/4 teaspoon salt (optional)

Prep:10min  ›  Ready in:10min 

  1. Pour cream into a food processor or blender. Process for 10 minutes, or until the butter separates. Strain off the liquid. Season to taste with salt if you like. Press butter into a small bowl with the back of a spoon to further remove liquid.

You can also do this in the mixer. I use our Kenwood and the K-beater does an excellent job in about the same time. Don't be afraid to run it fairly fast but BE AWARE of the fact that you may get a bit of splash if you try doubling the recipe. The best way I've found for draining is to line a colander with butter muslin (wonder why they call it that) and tip the separated cream into it. Save the buttermilk. It's good in loads of things including the home-made bread you'll spread the butter on! - 29 Oct 2012


A little addition to the above. If you want a more "spready" butter - one that will spread more-or-less from the 'fridge, incorporate some olive oil after making the butter. - 03 Nov 2012
