About this recipe:Here are some really easy to make samosas which will be ready to serve in no time. Serve them with the sauce of your choice such as mango chutney, coriander chutney or even raita. They can be frozen easily before frying; simply defrost at room temperature and then fry as stated.
1 tablespoon oil
300g beef mince
1 onion, chopped
1 shallot, minced
1 thyme sprig
1 tablespoon curry powder
1 packet filo pastry
salt and pepper to taste

Cook the mince with the onion, shallot and thyme and one tablespoon of oil in a large saucepan. Cook for 5 minutes, until meat is well done.
Remove from heat, add curry powder and season with salt and pepper.
Lay a sheet of filo on a work surface, and cut lengthways into thirds. Add a spoonful of meat mixture at the top of each strip and fold into triangles. Continue the process until no mince mixture remains.
Heat the oil in a deep frying pan over high heat. Once hot, add the samosas and fry until golden brown.
