About this recipe:This beef and ale stew recipe is really easy and does not require many ingredients. The end result is delicious. This stew is perfect served with a wild rice blend, mashed potatoes, creamy polenta or simply loads of crusty bread.
1kg stewing steak, cut into long strips
salt and pepper to taste
2 onions, sliced
1 teaspoon ground nutmeg
1 tablespoon plain flour
100ml beef stock
5 carrots, sliced

Melt the butter in a large saucepan and saute the beef. Season with salt and pepper. Remove from heat and set aside.
Cook the onions for a few minutes over medium heat until tender, stirring constantly. Add salt and pepper, nutmeg and flour. Cook for 1 more minute stirring constantly. Add the stock, bring to the boil and deglaze the bottom of the saucepan.
Add the meat, carrots and beer.
Cover and simmer for about 2 hours and 15 minutes until the beef is very tender.
There are only two of us so I altered the amount of carrots. The real reason for TWEAKING is that I used Baxter's French Onion Soup and a small can of Guinness. I also added mushrooms. Did not add salt. It was DELICIOUS! - 18 Nov 2010
