Beef and red pepper stir fry

    This is an easy peasy stir fry with just a few simple ingredients, making it perfect for a midweek supper. Serve over plain white rice. You may wish to make your own additions, such as chopped spring onion or sesame seeds added at the end. Use a wok if possible, or a large frying pan.

    Serves: 4 

    • 1 tablespoon olive oil
    • 500g beef, finely sliced
    • 1 large onion, diced
    • 2 red peppers, cut into strips
    • 1 teaspoon allspice
    • 2 tablespoons soy sauce
    • 1 teaspoon fresh parsley, finely chopped

    1. Heat the olive oil in a wok or large frying pan over medium heat. Add the onions to the wok and cook until translucent. Add the red peppers and beef to the wok. Cook for about 7 minutes.
    2. Add the allspice and soy sauce. Stir and cook for 1 more minute. Sprinkle with the chopped parsley.

    Don't let the lack of ingredients fool you into thinking it lacks in taste......... It is delicious . I have some fussy eaters in our house and everyone loves it . I tend to chop up every thing the night before it's required so that when I get in from work the next day I fling it together and it's ready in about ten mins.
