About this recipe:This is the salad I prepare for my husband when he wants to eat in the office. Use a ready made vinaigrette dressing or you can make your own. It's a lovely salad for lunchtime, and a nice way to use smoked salmon trimmings.
200g green salad
100g cherry tomatoes
75g pine nuts
75g cashew nuts (roasted and salted)
1 red pepper, diced
250g blue cheese, diced
250g smoked salmon, cut into strips

First add the green salad to a large bowl. Add the tomatoes, nuts, red pepper and cheese. Finally add the salmon. Toss well, drizzle with vinaigrette of choice and serve.
