    About this recipe: This is the easiest chicken curry, which you can make with just a few simple ingredients from your cupboard. Turkey breast can also be used with great results. Add the curry powder to taste, and for a more intense flavour, fry the curry powder and cumin in the oil with the onion for just a minute before adding the chicken.

    Serves: 4 

    • 1 onion, minced
    • 1 tablespoon oil
    • 4 chicken breast fillets, diced
    • curry powder to taste
    • 1 pinch ground cumin
    • salt and pepper to taste
    • 1 vegetable stock cube
    • 250ml boiling water from the kettle

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Heat the oil in a frying pan over medium heat. Add the onion and cook till soft.
    2. Add the diced chicken to the pan and sprinkle with curry powder, cumin, salt and pepper.
    3. Dissolve the vegetable cube stock in the hot water. Add to the pan and simmer for 15 to 20 minutes, uncovered. Add more stock or water if sauce gets too thick.
    4. Check the seasoning and add more if necessary. Serve with basmati rice.

    Something else. I added a tablespoon of cornflour to thicken up as I found it too runny originally  -  06 Jan 2011
