This chicken dish doesn't require much work and the whole family will love it! Chicken in a refreshingly light vodka, lemon and tomato sauce. It is perfect for a weeknight supper, served with pasta or rice.

4 chicken breast fillets
salt and pepper to taste
3 tablespoons plain flour
2 tablespoons oil
150ml chicken stock
3 tablespoons lemon juice
1 (400g) whole plum tomatoes, drained and cut into small pieces
75g spring onions, minced

Season the chicken breasts with salt and pepper then dredge them in the flour, shaking off the excess.
Heat the oil in a frying pan and cook the chicken for 5 minutes on each side. Remove chicken from pan and set aside.
Deglaze the pan with the vodka AWAY from any flame, and scrape the pan with a spoon to break up any of the flavourful bits at the bottom.
Add the chicken stock, lemon juice, tomatoes and chopped onions.
Cook on high heat, stirring occasionally, and let the sauce reduce and thicken slightly (about 8 minutes).
Return the chicken to the pan, reduce the heat and simmer for 10 minutes, or until the chicken is cooked thoroughly and the sauce has thickened. If the sauce is too thick, add a few tablespoons of chicken stock.
