About this recipe: I had some chocolate dessert cups and decided to fill them with a little bit of raspberry coulis. I added a few leaves of fresh mint from my garden. Sheer bliss!! I love the aftertaste of the fresh mint. Chocolate dessert cups are available in specialty shops and online. They're nice to have in the house for impromptu puds like this!


Serves: 4 

  • 4 chocolate dessert cups
  • 500g fresh raspberries (or frozen if out of season)
  • 1 tablespoon vanilla sugar
  • 8 fresh mint leaves

  1. Add the raspberries to the bowl of a food processor and mix well until pureed. Pour the puree into a fine sieve over a bowl to obtain the coulis. Add the vanilla sugar and mix.
  2. Pour the coulis into the chocolate cups. Decorate each with one or two fresh mint leaves.

Vanilla sugar

If you haven't any vanilla sugar, simply use a tablespoon of icing sugar with a drop of pure vanilla extract instead.
