    About this recipe: This is an easy pud to make and never fails to please. The batter itself is worth remembering - you can omit the sugar and use it for vegetables for a savoury nibble. Don't skip letting the batter rest for 1 hour.

    Ingredients
    Serves: 8 

    • 250g plain flour
    • 1 teaspoon salt
    • 2 eggs
    • 2 tablespoons oil
    • 2 tablespoons sugar
    • 250ml milk
    • fruit, such as apple, banana, orange or pear, cut into pieces
    • icing sugar to serve

    Method

    1. Mix the flour and salt in a bowl. Make a well in the centre and add 1 egg. Mix with a bit of the flour, then add another egg. Mix again, then add 2 tablespoons of oil and sugar. Gradually add the milk. Mix until smooth and with no lumps. Set the batter aside for at least 1 hour.
    2. Heat the oil in a deep frying pan. Coat the fruit with the batter and add into the hot oil for 3 minutes. Drain and place on kitchen paper. Dust with the icing sugar to serve.
