Heat the oil in a frying pan and cook the pork chops over medium heat for about 8-10 minutes per side until no longer pink inside. Season the chops with salt and pepper to taste. Remove the pork chops from the pan and set aside on a plate.
Pour the white wine into the pan and bring to the boil, scraping the bits from the bottom, and cook until the wine has reduced by half.
Add the creme fraiche and mustard, stir well and return the pork chops to the pan. Season the sauce to taste. Cook the chops in the sauce for 5 minutes over low heat. Do not let the sauce boil!
