This lightly spiced tagine is super easy to do. Check the tagine while it is cooking to make sure that there is enough water. Lamb and prunes go very well together and everyone will enjoy this dish! Serve with couscous.

1kg lamb shoulder, cut into large cubes
3 tablespoons olive oil
3 large onions, quartered
3 turnips, cubed
3 carrots, sliced
4 tomatoes, chopped
1 pinch cayenne pepper
salt and pepper to taste

Cook the lamb in a casserole with the oil over high heat. Add all the vegetables and cayenne pepper. Season with salt and pepper. Add a glass of water. Cover and simmer over low heat for one hour. Stir in the prunes, add more water if it is too dry and cook for another hour.
