Muffins with spiked apple jam filling

    These muffins are flavoured with tonka bean and filled with apple jam with Pommeau (a mix of apple juice and calvados or apple brandy) and salted butter, a specialty from Brittany. The jam can be found online but you can also use regular apple jam spiked with a little calvados or apple brandy.

    Serves: 6 

    • 150g plain flour
    • 60g caster sugar
    • 1 teaspoon baking powder
    • 1/3 tonka bean, grated, to taste
    • 1 pinch salt
    • 1 tablespoon vanilla sugar
    • 60g butter, melted
    • 1 egg
    • 120ml milk
    • 6 teaspoons apple jam with Pommeau and salted butter (available online)

    1. Preheat the oven to 180 C / Gas 4. Line a muffin tray with 6 paper cases.
    2. Mix all dry ingredients in a bowl and all liquid ingredients in another bowl. Mix the two together and lightly stir.
    3. Fill half of each muffin case. Add 1 teaspoon of jam and then fill the case to about 2/3.
    4. Bake for 15 minutes.
