About this recipe: This is a savoury cake that is wonderful served hot or cold. It is easy to do, but guests will be very impressed. You could add some fresh chopped herbs to taste, though it is lovely as is. Great for a cocktail party or picnic.


Serves: 8 

  • 4 eggs
  • 150ml olive oil
  • 150ml white wine
  • 100g plain flour
  • 100g grated Gruyere cheese
  • 1 teaspoon baking powder
  • salt and pepper to taste
  • 200g cooked ham, chopped
  • 45 pitted green olives, chopped

  1. Preheat the oven to 210 C / Gas 6-7.
  2. Crack the eggs into a bowl. Add the oil and wine. Mix well. Stir in the flour, cheese, baking powder, salt and pepper. Add the ham and olives.
  3. Butter a loaf tin and dust with flour. Pour the batter into the tin and bake in the oven for about 50 minutes. Check with a knife if ready. If the knife comes out clean, then the bread is ready. Remove the bread from the oven when done and carefully remove the bread from the tin as soon as it is out of the oven.


Why not try making mini muffins instead? Bite-size muffins are especially great for a cocktail party. Simply adjust baking time accordingly, approximately 8 to 10 minutes.
