About this recipe: This is an easy, comforting chocolate pudding, best served warm with some whipped cream. It's a cross between a brownie and a souffle. You're likely to have all the ingredients to hand, so it is perfect for those sudden chocolate cravings!


Serves: 8 

  • 140g butter
  • 280g milk chocolate, cut into squares
  • 8 eggs, separated
  • 250g caster sugar
  • 4 tablespoons plain flour

  1. In a saucepan, melt the butter over very low heat, adding the squares of chocolate one by one. Stir constantly. When the mixture is smooth and creamy, remove from heat and cool down.
  2. Add the egg yolks one by one into the butter-chocolate mixture, stirring well. Then add the sugar and flour.
  3. Preheat the oven to 160 C / Gas 3-4.
  4. In a bowl, whisk the egg whites until stiff, then add the chocolate mixture, stirring gently.
  5. Pour the batter into a buttered baking dish and bake for 30-35 minutes.
