Pecan and Maple Syrup muffins

    Canadian-inspired muffins studded with toasted pecans and sweetened with maple syrup. You'll love the subtle sweetness and flavour that the maple syrup brings. Delicious warm from the oven with a little butter.

    Serves: 3 

    • 120g plain flour
    • 40g caster sugar
    • 1.5 teaspoon baking powder
    • 1 teaspoon salt
    • 80ml milk
    • 25ml oil
    • 1 egg
    • 4 tablespoons maple syrup
    • 100g toasted pecans, chopped

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the oven to 200 C / Gas 6. Lightly grease a muffin tin, or line with paper cases.
    2. Mix all dry ingredients together in a bowl.
    3. Then mix all liquid ingredients in another bowl. Add the pecans. Pour into the dry mixture, and fold together until just moistened. (Note that the batter for muffins, unlike cupcakes, should be lightly mixed and have lumps. Don't mix till smooth, otherwise you'll have tough and dense muffins.)
    4. Bake in the oven for 15 minutes and enjoy!

    Great recipe, a few too many nuts for me but my mum loved them. Small batch recipe which is great as there is only 3 of us at home and it gets boring to eat the same every day. May try adding some mixed spice or ginger and reduce the nuts.  -  14 Apr 2017


    I made these the other day following this exact recipe and they turned out delicious! Only difference was I didn't have caster sugar so I used regular but they turned out great! My mum and dad loved them too! So amazing that I'm about to make some more and enter them into the Bake Off we're doing at work. Thank you for sharing ^_^  -  18 Sep 2014
