Raspberry coulis

About this recipe: I make this easy raspberry coulis recipe with fruit only when in season. If your fruit isn't that ripe or flavourful, you can add the vanilla sugar at the end. Serve this coulis over ice cream, or drizzled over cheesecake. It's also fantastic mixed into drinks.


Serves: 4 

  • 500g fresh raspberries
  • 1 teaspoon vanilla sugar (optional)

  1. Place the raspberries in a blender and puree for one minute.
  2. Pour the mixture into a fine sieve over a bowl. The raspberry juice will drip into the bowl. Only use the juice and discard the seeds left in the sieve.
  3. When done, add the vanilla sugar to the juice. Mix and serve chilled.

Vanilla sugar

If you don't have vanilla sugar, use caster sugar with a drop of vanilla instead.
