About this recipe: Valrhona is a French chocolate producer, revered by chocolate lovers worldwide. If you can get your hands on Valrhona chocolate - particularly their xocomeli bar - by all means use it. If not, another good quality chocolate will do! Of course, for a chocolate madeleine without the heat, simply use regular plain chocolate.
