Spinach and berry salad

    A healthy and colourful salad! The berries used here are low in sugar. Perfect for diets or to get back into shape. I often put the vinaigrette on the side. I also like it without any dressing. When the ingredients are very fresh and in season, you can really enjoy all the different flavours.

    • 75g baby spinach
    • 250g raspberries
    • 100g strawberries, diced
    • 100g cherry tomatoes
    • 20g ComtĂ© cheese, diced
    • 50g cashew nuts
    • 1 teaspoon fresh flat leaf parsley, minced

    1. First arrange the spinach in a nice serving bowl. Add the raspberries and strawberries, then the cherry tomatoes, Comté and cashews nuts. Sprinkle with the chopped parsley.
