zest and juice of 1 lemon

Add the tomatoes, lemon juice and vinegar to a bowl. Season with pepper, mix and refrigerate.
Peel the grapefruit and remove the segments by inserting the blade of a knife between the thin membranes and separating the segments.
Divide the tomato salad between four glasses. Add the crab meat, then grapefruit. Top with the lemon zest and serve immediately.
