Tomato, crab and grapefruit cups


    Great presentation, easy to prepare and a tempting combination. Always a great success! Crab meat combines with a citrusy combination of lemon, grapefruit and tomato. This is a nice summer starter.

    Serves: 4 

    • 20 cherry tomatoes, halved
    • zest and juice of 1 lemon
    • 1 teaspoon balsamic vinegar
    • Pepper to taste
    • 2 grapefruit
    • 200g crab meat

    1. Add the tomatoes, lemon juice and vinegar to a bowl. Season with pepper, mix and refrigerate.
    2. Peel the grapefruit and remove the segments by inserting the blade of a knife between the thin membranes and separating the segments.
    3. Divide the tomato salad between four glasses. Add the crab meat, then grapefruit. Top with the lemon zest and serve immediately.
