Vanilla rice pudding

    1 hour 5 min

This rice pudding is rich, creamy and delicious. It can be served warm or cold. It is my children's favourite pudding! If you don't have basmati rice to hand, use a medium-grain rice.

    • 1/4 teaspoon salt

    1. Bring water, salt and rice to the boil in a saucepan over medium heat. Reduce heat to low, cover and simmer for 10 minutes, or until there is no more water.
    2. Add the milk, cream, sugar and vanilla and cook over medium heat for about 35 minutes. The rice will become very soft and the mixture will be creamy and thick. Pour the rice pudding into a bowl or individual ramekins. Serve warm or chilled.

Lovely rice pudding. Tasted so luxurious. I didn't have any creme fraiche so used carnations milk instead. Absolutely gorgeous. Thank you for this easy recipe. Its a must....try it.  -  21 Feb 2018
