    About this recipe: For the origin of this recipe please see the notes for Granny's red tomato chutney. It's a great way to use up all those tomatoes that haven't ripened.

    Makes: 6 Jars

    • 450g (1lb) onions, chopped
    • 2kg (5lb) green tomatoes, chopped
    • 1/2 teaspoon salt
    • 1 teaspoon pickling spice
    • 400 to 600ml (3/4-1pt) white vinegar
    • 450g (1lb) caster sugar

    1. Cook the onions in a little water for about 20 minutes.
    2. Add the tomatoes, salt and spices (in a muslin bag) and continue cooking until tender. You may have to add a little vinegar to prevent burning.
    3. Add the sugar and the remaining vinegar and contunue cooking until no liquid remains and it has the consistency of jam.
    4. Remove the spices and ladle into pre-heated jars. Seal immediately and store for as long as possible before using.
