    About this recipe: This is my favourite bread! It is a bread machine recipe. You may substitute vegetable oil for flaxseed oil if desired.

    Ingredients
    Serves: 12 

    • 250ml (9 fl oz) water
    • 1 1/2 tablespoons flaxseed oil
    • 3 tablespoons honey
    • 1/2 tablespoon liquid lecithin
    • 375g (13 oz) wholemeal flour
    • 75g (3 oz) flax seed
    • 2 tablespoons strong white bread flour
    • 3 tablespoons whey powder
    • 1 1/2 teaspoons sea salt
    • 1 dessertspoon dried active baking yeast

    Method
    Prep:5min  ›  Cook:3hr  ›  Ready in:3hr5min 

    1. Put all the ingredients in the pan of the bread machine in the order suggested by the manufacturer. Select Wheat Cycle, and Start.

    Tip:

    Lecithin, derived from soya beans, is a natural emulsifier. It is a thick, brown liquid and is most commonly used as an ingredient in good quality chocolate. It should be available in most health food shops.

    I wonder what is meant by wheat cycle? wholewheat? wholewheat rapid? I have now made 5 of these loaves in panasonic 2500 machine. not one has risen. all taste great but hard tough crust not risen and over browned. have used wholewheat program no 4. Its driving me mad! can anyone help? - 05 May 2012

    Used different ingredients. I have made this recipe several times, and every loaf is consistently good. My family really likes it. I have even made it using plain flour instead with very nice results. - 14 Jul 2008
