    About this recipe: This coleslaw salad is a great for a BBQ or a light lunch. The yoghurt dressing is lighter than other coleslaw dressings.

    Ingredients
    Makes: 4 

    • 1 small whole cabbage, shredded
    • 4 medium carrots, grated
    • 1 red onion, thinly sliced
    • 1 medium granny smith apple, cut into small bitesize pieces
    • 30g (1oz) chopped roast hazelnuts
    • 30g (1oz) seedless sultanas (optional)
    • 4 tbsp (60ml) plain yoghurt
    • 2 tsp (10ml) dijon mustard
    • 2 tsp (10ml) low-fat mayonaise
    • 2 tsp (10ml) lemon juice

    Method
    Prep:30min  ›  Extra time:1hr chilling  ›  Ready in:1hr30min 

    1. Drizzle a bit of lemon juice on the apples to keep from going brown.
    2. Whisk together the yoghurt, mustard, mayonaise and lemon juice.
    3. Add cabbage, carrots, red onion, apples, sultanas and hazelnuts.
    4. Toss well together to combine.
