Chocolate Topped Orange and Almond Cake

    This is an incredibly popular birthday cake. A delicious moist almond-enriched cake is coated in melted chocolate. If you prefer a stronger orange flavour, add the grated zest of the orange to the batter.

    Serves: 4 

    • 1/2 teaspoon baking powder
    • 1 orange, juiced
    • 100g caster sugar
    • 100g ground almonds
    • 2 eggs, separated
    • 50g cornflour
    • 50g plain flour
    • salt to taste
    • To Decorate
    • 200g dark cooking chocolate, chopped into chunks
    • 1 tablespoon water

    1. Preheat oven to 180 C / Gas 4. Grease and flour a baking tin, shake out any excess flour.
    2. Beat the egg yolks with sugar until light and creamy. Add orange juice, almonds, flour and cornflour. Mix until smooth.
    3. In another bowl, beat together egg whites until stiff. Fold into the egg yolk mix with 1 pinch salt and baking powder.
    4. Pour batter into prepared tin. Bake in preheated oven for 30 minutes. The cake is done when a skewer inserted into the centre comes out clean.
    5. Let cool in the tin for at least 10 minutes before turning out onto a wire rack to cool fully. Then transfer to serving plate.
    6. Meanwhile, melt chocolate in a double boiler. Add 1 tablespoon water and stir until smooth. When the cake is cool, ice the cake with a spatula, starting from the edges and ending with the top.
    7. Let sit for at least 2 hours for the icing to set. Decorate with candles if you're using this as a birthday cake.
