About this recipe: This salad is quick and easy to make. Grated carrots are tossed with shallot, parsley and balsamic vinegar. For best flavour, use the best quality balsamic vinegar you can afford.


Makes: 2 - 4 servings

  • 1 large carrot, peeled and grated
  • 1 shallot, finely diced
  • 1 tablespoon parsley, finely chopped
  • 100ml balsamic vinegar

  1. In a bowl, mix together carrots and shallots.
  2. Pour over balsamic vinegar and sprinkle with parsley.
