Classic cheese souffle

    This souffle is easy to make and incredibly light and delicious. It's made with Greek yoghurt instead of white sauce. Enjoy with a green salad.

    Serves: 6 

    • 1 pinch ground nutmeg
    • 1 tablespoon cornflour
    • 1 tablespoon vegetable oil
    • 4 egg whites, beaten until very stiff
    • 4 egg yolks
    • 500g Greek-style yoghurt
    • 70g grated Gruyere cheese
    • salt and pepper to taste

    1. Preheat oven to 180 C / Gas 4.
    2. In a bowl, mix the yoghurt, egg yolks, cornflour, grated cheese, salt, pepper and nutmeg. Mix well. Gently fold in the egg whites with a fork.
    3. Grease a soufflé dish and pour the batter into the dish. Bake in the oven for about 35 or 40 minutes. The soufflé should be properly cooked in order to deflate not too quickly.
    4. Serve with a green salad.
