Moist Christmas fruit cake

    This cake can be enjoyed anytime of the year, but is particularly pretty during Christmastime. It's studded with rum-soaked raisins and crystallised fruit.

    Serves: 10 

    • 1/2 teaspoon baking powder
    • 1 tablespoon icing sugar
    • 1 tablespoon vegetable oil
    • 100g raisins, soaked in rum
    • 250g butter, melted
    • 250g caster sugar
    • 250g crystaliised fruit, glace cherries or chopped mixed peel
    • 450g plain flour
    • 6 eggs

    1. Preheat oven to 160 C / Gas 2 1/2. Grease a non-stick loaf tin.
    2. In a large bowl, beat eggs and sugar until light and fluffy. Add butter, then flour and baking powder. Mix well. Stir in raisins and crystallised fruit. (The batter will be quite thick).
    3. Pour batter into prepared tin and bake in preheated oven for 50 minutes or until a skewer comes out clean when inserted into the centre of the cake.
    4. Cool cake in tin for a few minutes, then turn out onto a wire rack. Dust with icing sugar before serving. Enjoy warm or cold.
