Chocolate Duo Ice Cream

Silicone moulds are brushed with melted chocolate, then filled with two different variations of ice cream or sorbets. They are then served alongside a shortbread biscuit.

Ingredients
Serves: 6
- 500ml chocolate ice cream
- 500ml ginger ice cream
- 500ml lemon sorbet
- 500ml mango sorbet
- 500ml raspberry sorbet
- 500ml vanilla ice cream
- 6 shortbread biscuits
- assorted fruit (raspberries, lemon slices, mango, etc.)
- chocolate shavings
- melted chocolate (optional)
Method

Ready in:2hr
- Brush 6 individual silicone cake moulds with melted chocolate (if using).
- Fill each mould with any two combinations of ice cream or sorbets. Examples: raspberry and mango, lemon and ginger, vanilla and chocolate, chocolate and ginger.
- Freeze for 1 hour.
- Turn the ice cream out onto a plate and serve with one shortbread. Decorate with fruit and chocolate shavings, if desired.
