Silicone moulds are brushed with melted chocolate, then filled with two different variations of ice cream or sorbets. They are then served alongside a shortbread biscuit.

Ingredients
Serves: 6
500ml chocolate ice cream
500ml ginger ice cream
500ml lemon sorbet
500ml mango sorbet
500ml raspberry sorbet
500ml vanilla ice cream
6 shortbread biscuits
assorted fruit (raspberries, lemon slices, mango, etc.)
Fill each mould with any two combinations of ice cream or sorbets. Examples: raspberry and mango, lemon and ginger, vanilla and chocolate, chocolate and ginger.
Freeze for 1 hour.
Turn the ice cream out onto a plate and serve with one shortbread. Decorate with fruit and chocolate shavings, if desired.
