    About this recipe: This fantastic onion jam is delicious with hard cheese. If you need more than 3 jars - you should double the amounts.

    Ingredients
    Makes: 3 jars

    • 3 tablespoons olive oil
    • 750g onions, peeled and thinly sliced
    • 300ml good quality red wine
    • 160g dark brown soft sugar
    • 4 tablespoons balsamic vinegar

    Method

    1. Heat the oil in a large saucepan over medium heat and cook the onions gently, for about 30 - 40 minutes.
    2. Pour in the red wine, brown sugar and balsamic; continue to stir until the mixture thickens. It should be of a syrupy consistency as it will thicken up even more as it sets.
    3. Cover and simmer for 2 to 3 hours, stirring occasionally or until all the juice has evaporated and the sauce is of a jam-like consistency.
    4. Pour into sterilized jars. Seal and keep for several months at room temperature. Once opened , store in fridge and use with in 2 weeks.
