Mini Fruit Cakes

    These fruit cakes are rich and bursting with flavour. Each cake is packed full of plump fruit and ground almonds. They are a little more bread-like than the traditional fruit cakes, but don't let this put you off!

    Serves: 6 

    • 1 small lemon, zested and juiced
    • 1 teaspoon ground ginger
    • 100g dates, stones removed and chopped
    • 2 eggs
    • 240g raisins
    • 60g butter, softened
    • 60g dark brown soft sugar
    • 75g ground almonds
    • 75g plain flour
    • icing sugar for dusting

    1. Preheat the oven to 150 C / Gas 2. Butter six ramekins or small cake tins. Set aside.
    2. Mix together the lemon zest, lemon juice, ginger, dates and raisins. Let sit for at least 1 hour.
    3. Beat together the butter and sugar until light and fluffy.
    4. Add the eggs, one at a time, beating well after each addition.
    5. Stir in the flour, ground almonds and soaked fruit.
    6. Pour batter into ramekins and bake in preheated oven for 1 hour.
    7. Let cool, then dust with icing sugar.
