    About this recipe: This sauce is quick and easy to make and requires no cooking! Make sure you use the ripest summer tomatoes and fresh herbs (if using). Serve alongside fish, chicken or with bread and cheese.

    Serves: 4 

    • 1 clove garlic, finely chopped
    • 1 lemon, juiced
    • 1 tablespoon fresh herbs, such as parsley, chervil, tarragon or mint (optional)
    • 2 tablespoons extra-virgin olive oil
    • 3 ripe tomatoes, chopped
    • salt and pepper to taste

    1. Transfer all the ingredients to a food processor. Blend until smooth and creamy.
