Tasty Tomato Coulis

    This is a great sauce to make when tomatoes are in-season. It's simple, fresh and delicious. Serve with pasta, quenelles, meat or fish.

    Serves: 15 

    • 15 tomatoes, quartered
    • 18 garlic cloves, finely chopped
    • 3 bay leaves
    • 3 onions, finely chopped
    • 3 tablespoons olive oil
    • 25g fresh thyme, basil or rosemary, chopped

    1. Heat the oil in a large saucepan over medium heat. Saute the garlic and onions until fragrant. Stir in the tomatoes, bay leaves and herbs
    2. Simmer over low heat uncovered for about 45 minutes. Remove bay leaves and then transfer to a liquidiser or food processor. Blend until smooth.
    3. Enjoy immediately or freeze for later use.
