About this recipe: This is a fancy appetiser or starter to serve at dinner parties. Glasses are filled with layers of cucumber, tomatoes and tzatziki sauce. Simple, quick and easy!


Serves: 4 

  • For the Tzatziki
  • 1 (150g) pot natural yoghurt
  • 2 tablespoons olive oil
  • 1 clove garlic, finely chopped
  • 1 teaspoon finely chopped fresh dill
  • 1 teaspoon finely chopped fresh oregano
  • 4 mint leaves, finely chopped
  • salt and pepper to taste
  • For the Cucumber
  • 1/2 cucumber, diced
  • 1/2 teaspoon salt
  • pepper to taste
  • For the Tomatoes
  • 3 ripe tomatoes, diced
  • 1 pinch paprika
  • 1 tablespoon olive oil

  1. Place cucumber into a colander. Sprinkle with salt and let drain for 30 minutes.
  2. In a bowl, mix together the tomatoes, paprika and olive oil. Set aside.
  3. In another bowl, mix together yoghurt, olive oil, garlic, dill, oregano and mint. Season with salt and pepper.
  4. Pour a layer of each mixture in a glass, alternating colours and layers. Bon appetit!
