Turkey with Preserved Lemons

    A wonderfully fragrant dish, made by cooking turkey breasts with lemon juice, ginger and preserved lemons. Simple and delicious. Serve with rice or couscous, if desired.

    Serves: 4 

    • 2 lemons, juiced
    • 2 skinless turkey breast fillets, cut in half
    • 4 chives, chopped for garnish
    • 1 (4cm) piece fresh root ginger, diced
    • 4 sprigs flat-leaf parsley, chopped
    • 4 preserved lemons, washed and cut into pieces
    • 1 knob butter
    • salt and pepper to taste

    1. Place turkey breasts, lemon juice, ginger, salt and pepper into a large resealable bag. Press out the air and seal the bag. Massage the turkey breasts a little, then chill for at least 1 hour.
    2. Remove the turkey from the marinade. Reserve marinade.
    3. Heat the butter in a large frying pan over high heat. Sear the turkey breasts, 2 minutes per side. Reduce the heat and cook until golden brown on both sides, about 10 minutes.
    4. Add the reserved marinade and preserved lemons to the pan. Cook for another 5 minutes. Sprinkle with parsley and chives to serve.
