Simple Watercress Soup

    This soup is simple to make and packed full of flavour. Watercress and shallots are simmered together in a vegetable stock, then blended until smooth.

    Serves: 4 

    • 1 litre vegetable stock
    • 1 shallot, chopped
    • 25g butter
    • 75g fresh watercress, leaves only
    • salt and pepper to taste

    1. Heat the butter in a large saucepan over medium heat. Saute the shallot for 5 minutes or until brown.
    2. Add the watercress leaves and stir-fry for 1 minute. Stir in the stock. Season with salt and pepper. Simmer for 15 minutes over low heat.
    3. Liquidiser the soup with a hand blender. Serve with a dollop of creme fraiche.
